Betty's Favorite Recipes
CHOCOLATE SHEATH CAKE
2 cups flour
2 cups sugar
Mix in a saucepan:
2 sticks oleo
1 cup water
4 tbs. cocoa
Bring this to a rapid boil. Pour over flour and sugar mixture, stir until well mixed.
½ cup buttermilk (powdered buttermilk use as directed)
2 eggs, slightly beaten
1 tsp. soda
1 tsp. vanilla
Mix well, pour into a greased pan (18”x12”x1”). Bake 20 minutes at 400 degrees.
Melt and bring to boil:
1 stick oleo
4 tbs. cocoa
6 tbs. milk
Remove from heat, add 1 box powdered sugar*, sifted, 1 tsp. vanilla, 1 cup pecans, chopped. (pecans may be left out or sprinkled on top)
Beat well and spread on cake while hot.
*add more powdered sugar to thicken if needed.
Raisin Bran Muffin
1 – 15oz. box Raisin Bran
2 tsp salt
2 tsp baking soda
1 qt butter milk
Mix together & store in refrigerator up to six weeks. Bake at 425° for 15-20 minutes. Makes approximately 4 qts. Fill muffin pan about ¾ full.
Wagon Wheel Dip
16 oz. Can refried beans
1 1/2 lb. Lean ground beef
1 lb. Shredded cheddar cheese
16 oz. Jar of Picante sauce (to taste-mild, med, hot)
I use medium
1 pkg. Taco seasoning
First brown beef & drain if needed.
Add taco seasoning, blend in & set aside.
Spread can of beans on bottom of 9"x13" dish.
I use glass pyrex.
Spread 1/2 jar of picante sauce (over beans)
Spread 1/2 pkg. of cheese over picante.
Spread beef over cheese.
Spread remaining picante over beef.
Spread remaining cheese over top to complete.
Bake @ 350º, 20-30 minutes to completely melt cheese throughout.
2 cans apple pie filling.
1 box Betty Crocker sour cream white cake mix
1 stick butter or marjarine
Pour pie filling into 9x13 baking dish to cover bottom of dish.
Top with cake mix to cover apples.
Top with thin pats of butter to cover cake mix.
Bake @ 350º for 1 hour ( check after 45 minutes)
2 cans sliced apples and once in pan sprinkle with cinnamon and sugar or you can buy McCormick's cinnamon sugar in the spice section of the grocery store.
You may need a little more butter depending on how you cut the pats.
Baking dish can be glass or disposable aluminum lasagna size with plastic lid.
1+ bx. Graham Crackers
1 Lg. Cool Whip Thawed (12oz.)
2 Sm. Pkg. French Vanilla Instant Pudding
3 cups Milk
1 Sm. Bx. Chocolate Instant Pudding
(prepared with 1 ½ cups of Milk)
Line bottom of 9”x13” dish with crackers
Top with mixture of vanilla pudding, milk and cool whip
Continue with cracker / pudding layers
With cracker layer last.
Topped with Chocolate Pudding.
